The study

What the 2023 research actually did

Researchers published a study in Environmental Science & Technology, a peer-reviewed journal of the American Chemical Society, titled “Cutting Boards: An Overlooked Source of Microplastics in Human Food?”

They did not theorise. They chopped — different plastics, with carrots and without, across five people’s chopping styles — then counted and weighed what came off.

The honest part

The study measured exposure, not harm

It measured how much plastic comes off and reaches food. It did not measure health effects, and the science on what ingested microplastics do inside the body is still being worked out. Anyone telling you this study proves your board is making you ill has not read it.

But you do not need a health claim to look at 49 grams a year and decide you would rather not. It is your dinner.

Does the dishwasher help?

No. Heat and detergent clean the surface; they do not fill the grooves back in and they do not put the missing plastic back. A board that comes out looking spotless has exactly as much material gone as when it went in.
